Cut Out Cookies

There are so many yummie, extravagant, innovative recipes for Christmas cookies out there. But in the end, the simple ones are the ones that remind me of my childhood. Waking up and the house is full of the flavor from your mother baking in the kitchen. Still in the pyjama you steal the first bit of the cookie dough. And then – the first cookies fresh out of the oven with a hot chocolate. And these Cut-Out Cookies remind me exactly of that time.

This time I decided to make the double ones with marmalade. But be sure to let your fantasy work. You can make the simple ones with a little egg yolk on it before baking. Or decorating them after baking with different kind of chocolate.

Here I present you the ones I made this year and hope you like them.

Ingredients:

500 gr. flour (Type 1050)

1 tsp. baking powder

5 egg yolks

200 gr. sugar

1 sachet vanilla sugar

Lemon zest from one lemon

250 gr. butter, cold

1 pinch of salt

After the dormant phase:

Two baking sheets lined with baking parchment

Oven at 180°C / 360°F (top bottom heat)

Mix the flour with the baking powder well, put it into a big bowl and form a hollow. Put the egg yolks, sugar, vanilla sugar, lemon zest and pinch of salt into it and mix it with a folk. So you get a greasy dough of the eggs with the sugar and part flour.

On top put the cold butter in little pieces and knead until you have a homogenous dough. Put it into a foil and let it rest in the fridge for one hour.

After the dormant phase roll out and do your cut-outs of your taste.

Let them in the oven for about 10 minutes at 180°C / 360°F (top bottom heat).

This time the frames for the stars needed only 8 minutes. They are done when they become light brown. As always, the baking time depends on your oven. Always have an eye on your cookies.
