Belgian Waffles (sweet good morning)

Belgian Waffles for breakfast. What a great (and sweet) way to start a weekend (or just a normal day). That was the reason why I bought a waffle maker lately. Concerning taste I choose a recipe with yeast for my first waffle recipe to be published.

Ingredients:
60 gr. butter
400 ml milk
1 vanilla pod
20 gr. yeast (fresh)
50 gr. sugar
2 eggs, separated
1 pinch of salt
250 gr. all-pourpose flour
50 gr. coarse sugar

In a pan warm the milk together with the scratched out vanilla pod and the vanilla mark and the butter. When the butter is melted the milk should not be warmer than 100°F/40°C.

Take out the scratched out vanilla pod and add the yeast and the sugar and let it rest for 5 minutes.

Separate the eggs and put the egg whites aside. Mix together the flour with the egg yolks and the milk-vanilla-yeast-mixture until you have a homogenous batter. Cover your bowl and let it rest at a warm place for one hour.

After the dormant phase it has doubled the volume. Now mix the egg whites with a pinch of salt until firm and fold in softly together with the coarse sugar.
Now the batter is ready to be ironed.
